Apple Pancakes

apple, coarsely grated

eggs

tsp

cinnamon

Butter

Topping of choice

Squeeze some of the juice from the grated apple. Beat the eggs in a bowl. Add the apple and cinnamon and stir to combine. Melt butter in an omelet pan or skillet, and pour the mixture into the pan. When the pancake is browned on the bottom flip it over to cook the other side. When finished slide onto a plate.

Suggested toppings – coconut milk or yogurt sweetened with stevia, mashed berries, natural nut butter, grated coconut, chopped nuts
