Filtered water

Place all ingredients in a 2 quart glass container. Add filtered water to fill the container. Stir well and cover securely. Keep at room temperature for 2 days and transfer to the refrigerator. When most of the liquid has been drunk, fill up the conainer with water and keep at room temperature another 2 days. After this has been drunk, discard the beets and start again. You may use some of the liquid as an inoculant instead of whey.

Yield: 2 quarts

Tips

Do not use grated beets in the preparation of this tonic. It will cause alcoholic rather than a lactic acid fermentation.

This drink is valuable for its medicinal qualities and as a digestive aid. Beets are loaded with nutrition.
