Greek Spinach Rice

fresh or frozen spinach

olive oil

small onion, chopped

tomato paste or 1 15 oz can tomato sauce

Sea salt & pepper

Dried dill to taste or bunch of fresh dill to taste

uncooked brown rice

Sauté the spinach and onion in the olive oil. Add tomatoes, water, seasonings and rice. Cover and cook over low hear for about l hour until rice is done. To use as a main dish serve with cheese. Parmesan or feta are both good choices.
