Orange Chicken Stir-Fry

boneless chicken skinned and cut into strips

onion, sliced

clove garlic, minced

red bell pepper, seeded and sliced

snow peas

tomato paste

Finely grated peel and juice of 1 orange

cornstarch

bean sprouts

Cooked rice or noodles, to serve

Stir Fry Chicken in oil for 2-3 minutes.

Add the onion, garlic, bell pepper, and snow peas to the pan. Stir-fry until vegetables are just tender and the chicken is completely cooked through.

Mix together the liquid ingredients with the cornstarch. Add to the chicken and vegetables. Add segmented oranges and bean sprouts and heat though. Serve with cooked rice or noodles.
