Western Omelet

onion, chopped

plum tomatoes, diced

red bell pepper, diced

green bell pepper, diced

1

jalapeno, diced (optional)

Salt and pepper to taste

Hot pepper sauce (optional)

Butter for sautéing

Sauté vegetables in butter until soft. Add salt and pepper. Add hot pepper sauce if desired. Cook omelets individually – either 2or 3 eggs as desired. When the first side is almost set, sprinkle vegetables into the omelet and fold over. Slide the omelet onto a plate and serve with hot pepper sauce on top.
